I cannot imagine a BBQ without the ultimate summertime classic; Smoked Polish Kiełbasa! It is the secret behind the most successful hot-dog shops in USA 👀 To achieve the most authentic experience, you need to get the right Sausage. ‘Śląska’ or ‘Podwawelska’ are the ones you want to look for. All you need to do is score the skin, throw it on the grill, and season with nothing other than your favourite Polish Lager. Anyone that knows me knows I love a slow cook BBQ. A 10–12 hour slow smoked pork shoulder is my go to, difficult to put it in a recipe as I generally go for random spices and nice things as a rub, and always smoked over sustainable Dorset wood. Think the only thing I do that isn’t the norm is I generally spray with Cherry Coke during the cook 🤘. LAMB
You gotta bring the flavour when it comes to lamb, or you might as well pack up and go home. None of that bland business here, you need to marinate that meat like it's going out of style. We're talking about zesty lemon and herb marinades, and spicy harissa rubs. Trust us, when that lamb hits the grill, the sizzle and the smell are gonna have the whole neighbourhood knocking on your door.
My go to is a Butterflied Leg of Lamb with chopped herbs, lemon and Chilli. Really simple but delicious! I’m just about to buy a smoker, so watch this space! – simon_says_sneakers_

Murgh Malai Tikkas are bite size pieces of chicken grilled on a barbie in a creamy marinade with yoghurt, cheese, ginger, garlic and chilli. If you wanna be the king (or queen) of the grill, you gotta follow these top tips from the Community BBQ Bible. First off, never ever use a gas grill. That’s like cooking with a hairdryer, it's just not right. You gotta go old school with charcoal, none of that fancy pants stuff, innit @randeepkang? And when it comes to seasoning, forget about measuring spoons and all that nonsense. Just throw on a handful of this and a pinch of that, and you'll be good to go. Follow these top tips and you’ll be a BBQ boss.
Preparation is key so I marinate all my meat a day before and I make sure we have plenty of options and food on the Barbie!
